The Story Behind Our Nordic Eggs – A Taste of Tradition

Nordic Eggs - a rich, comforting plate inspired by the flavours of the far north. Think silky poached eggs nestled over smashed avocado, sliced radish, with delicate smoked salmon, a drizzle of garlic aioli, and a touch of heat from chilli jam. We recommend adding crispy bacon for the perfect balance of smoky, savoury, and spicy.
But where did the inspiration come from?
Legend has it that in the coastal villages of Norway and Sweden, smoked salmon has long been a staple - not just a delicacy, but a necessity. Centuries ago, fishing communities developed the technique of smoking salmon as a way to preserve their catch through the long, cold winters. Over time, it became more than just survival food. It turned into something they took pride in - a symbol of Nordic resilience and culinary craft.
The Nordic Eggs dish was said to have originated in a small Scandinavian café where hearty breakfasts met fine flavours. Local chefs began combining traditional smoked salmon with fresh, seasonal ingredients like eggs and greens. Garlic aioli and chilli jam added modern flair, but the base of the dish remained rooted in simplicity and substance - the hallmarks of Nordic cuisine.
Today, the dish is loved not only for its history but for how beautifully it balances indulgence with nourishment. It tells a story of nature, tradition, and innovation - just like the Nordic people themselves.
So this Easter, when you dig into our Nordic Eggs, know that you’re enjoying a dish with a rich past, a delicious present, and a little whisper of the north in every bite. Skål!
